
Shopping List
- 675g Frozen Peas
- 75g Onion, diced
- 75g Leeks, washed & sliced
- 24 Medium sized mint leaves, and 8 sprigs for garnish
- 3 Cloves of garlic, crushed
- 3 Bay Leaves
- 30g Bisto Vegetable Bouillon Paste
- 100ml Water

Minted Pea and Ham Soup
Serves 10Method
- Place the peas, onion, leek, mint, garlic and bay leaves into a large saucepan; add the water and the Bouillon paste.
- Bring to the boil, reduce the heat and simmer until the vegetables are cooked, skimming occasionally.
- Remove the bay leaves and strain the liquid into a clean saucepan. Place all of the vegetables into a food processor and mix to a smooth puree. Add the puree to the liquid.
Serving Suggestions
Serve with a swirl of crème fraiche and a sprig of mint.
