Shopping List
  • 675g Frozen Peas
  • 75g Onion, diced
  • 75g Leeks, washed & sliced
  • 24 Medium sized mint leaves, and 8 sprigs for garnish
  • 3 Cloves of garlic, crushed
  • 3 Bay Leaves
  • 30g Bisto Vegetable Bouillon Paste
  • 100ml Water

Minted Pea Soup Serves 10

Method

  1. Place the peas, onion, leek, mint, garlic and bay leaves into a large saucepan; add the water and the Bouillon paste.
  2. Bring to the boil, reduce the heat and simmer until the vegetables are cooked, skimming occasionally.
  3. Remove the bay leaves and strain the liquid into a clean saucepan. Place all of the vegetables into a food processor and mix to a smooth puree. Add the puree to the liquid.

Serving Suggestions

Serve with a swirl of crème fraiche and a sprig of mint.
